Beetroot Soup Borsh

Hearty soup recipe from Eastern Europe. It is a perfect pre-preparation meal. Leftovers you can easily freeze and warm up later.

Ingredients for 5 servings:
 
1. Onion,   1 large pc (120g)
2. Garlic,   2 cloves (16g)
3. Fresh beetroot,   300g
4. Carrot,   one pc (150g)
5. Canned tomatoes,   400g
6. Dried chili,   1 pc
7. Water,   2l
8. Cabbage,   150g
9. Bay leaves,   2 pcs
10. Salt,   1 tsp
11. Pepper,   1/2 tsp
12. Potatoes,   200g
13. Fresh lemon,   1 pc
14. Olive oil,   3 tbsp
15. Fresh dill,  3 sprigs

Step 1
 
Wash the cabbage and the potatoes.
Cut the cabbage into thin stripes.
Peel the potatoes.
Add both to a cooking pot with 1.5l of water and bring it to boil. Boil it till the potatoes are soft for about 15 min. Take the potatoes out, let them cool down and cut them into slices.
 
Step 2
 
In the meantime while you bring the cabbage stripes and potatoes to boil:
Wash the beetroot, carrot, onion, garlic.
Cut the onion into small pieces.
Cut the garlic in half and crush it with the flat part of your knife.
Cut the beetroot into thin stripes.
Grate the carrots.
 
Step 3
 
Preheat your cooking pot, medium heat, add 2 tbsp of olive oil.
Saute the onion and garlic for about 2 min till they are glazed.
Add the beetroot stripes, grated carrots and and saute for another 8 min till the beetroot stripes are getting softer.
Add the canned tomatoes, chili and let it cook for 5 min.
Add the 1,5l of water you used for the cabbage together with the cabbage and add another 0,5l of water, the bay leaves, salt, pepper and bring it to boil.
Cook it under medium heat for about 30 min till the beetroot stripes are soft.
 
Step 4
 
Squeeze 1/2 of the fresh lemon and add it to the soup. Let it sit for 2 min. Add some more salt, pepper and lemon juice according to your taste.
Rinse the dill and cut it.
Serve the soup. Garnish it with dill, the sliced potatoes and add some olive oil on top.
 
When you buy canned tomatoes check the list of ingredients. Best taste you get with those which contain pure tomatoes only and are not filled up with tomato juice.
